Even though we are all yearning for spring, it is still freezing cold. Warm up your family by slow cooking Zesty Black Bean Chili for dinner!
This hearty Black Bean Chili is a hearty chili full of tender pork, sweet corn, and zesty salsa that will chase away the chill of Old Man Winter.
The ingredients for this recipe are pantry staples in our house.
I love that the only prep work for the dish is cubing the pork tenderloin into bite sized pieces and chopping the onion.
Make sure to rinse and drain the black beans.
A great tip is to spray your crockpot with a coating of Pam to help with clean up. The rest is just dump and stir the ingredients together.
Cooking all day in the crockpot allows the pork tenderloin to become melt in your mouth tender.
Honey loves this savory chili for dinner.
The little people of the house? Not so much.
My children will not touch this chili with a ten foot pole. Way too many different ingredients going on for them. Especially Little Boy. He requested Chicken Noodle Soup for dinner. “Without the chicken, please Mommy.”
Oh well. Can’t please them all!

That does look very good! I’ve never heard of using pork tenderloin in chili. My boys won’t touch chili either. Some day they’ll like it though…
