Welcome winter with a creamy bowl of Slow Cooker Loaded Cauliflower Soup! It’s a low carb, hearty and wonderfully cheesy soup, perfect for weeknight meal!
Winters at our house are pretty busy.
Life with three kiddos never seems to slow down. There are always basketball games, dance lessons, and science projects (help me now!).
But the busyness of life doesn’t mean that I don’t want to give my family a nutritious meal. That’s one of the reasons I love adding Borden® Cheese to any recipe I serve my family.
Our busy family also means I’m always on the lookout for simple slow cooker recipes to add to our monthly meal plan. It’s a huge bonus if it’s a low carb dinner that fits with my goal of shedding a few pounds.
This cauliflower soup recipe is so very good! Adding topping like extra cheese and crumbled bacon makes is a dinner my children can’t refuse. They don’t even know it’s good for them!
Slow Cooker Loaded Cauliflower Soup
4 Tbsp butter
1 cup shredded carrots
2-3 finely chopped onions
1-2 chopped garlic cloves
2 Tbsp flour
4 cups (32 oz.) of chicken broth
15 oz. frozen cauliflower
Borden® Cheese Sharp Cheddar Shreds
1/2 cup heavy cream
salt and pepper to taste
a dash of cayenne ~ optional
Toppings: Borden® Cheese Finely Shredded Sharp Cheddar Shreds, crumbled bacon, chopped green onions
I found my Borden® Cheese at our local Bi-Lo grocery store, but check out this store locator to find Borden® Cheese near you! While I was there I grabbed several varieties of cheese to use in the children’s lunchboxes, our dinners, and snacks.
Borden® Cheese isn’t just for making family meals. While our dinner cooked I enjoyed a snack of Borden® Cheese Cheddar Jack Slices, a sliced apple, and sweet and spicy rosemary cashews.
How to Make Loaded Cauliflower Soup
- Cook carrots, onions, and garlic in butter on medium/low heat for 5 minutes in a skillet.
- Add flour and cook for 1-2 minutes stirring constantly.
- Slowly stir in 1 cup of chicken broth then add vegetable mixture to slow cooker.
- Add frozen cauliflower, shredded cheese, and the rest of the chicken broth.
Stir to combine.
- Season to taste with salt, pepper, and cayenne.
- Cover and cook in slow cooker (4-5 hours on low or 3-4 hours on high).
- Stir in heavy cream and let cauliflower soup sit until cream is heated through (5-10 minutes).
- Ladle into bowls then top with Borden® Cheese Finely Shredded Sharp Cheddar Shreds, crumbled bacon, and chopped green onions

I am trying to get the nutritional content for this recipe but am not sure how many servings this makes. Also wondering if I can substitute almond flour as regualar has more carbs?
