Meal Planning is smart. It’s healthier when you plan nutritious meals. It helps Mamas not go crazy.
I want to be smart and healthy.
I definitely don’t want to be a crazy Mama. But meal planning takes time. Time that I don’t have to sit down and actually decide what our family is going to eat for an entire week.
Thank goodness for eMeals, Inc. eMeals is a comprehensive meal planning resource that helps provide healthy and delicious dinners for busy families and individuals. This service provides weekly dinner plans that include grocery shopping lists and recipe instructions that are simple and easy to follow.
Whether you are looking for Kid Friendly, Slow Cooker, or 30 Minute Meals, there’s a plan to fit your family. I have often wanted to plan meals that are centered around lean meats, lots of veggies, and less processed foods. So I choose the Clean Eating Meal Plan.
Paleo Bacon Meatballs with Tomato Sauce was one of the recipes included in our first weekly meal plan.
This recipe has been altered to fit our family and groceries on hand.
Paleo Bacon Meatballs
- 4 slices of bacon
- 2 pounds of ground turkey {I used venison}
- 8 oz of mushrooms, finely chopped
- 1 large onion, finely chopped
- 1 large egg, beaten
- 1 tablespoon of Italian seasoning
- salt and pepper to taste
- 2 tablespoons of coconut oil
- 2 14.5 oz of canned tomatoes, diced
Before frying, I used scissors to cut the slices of bacon into smaller pieces. This step makes the bacon easier to incorporate as you form the meatballs.
Adding mushrooms and onions into any recipe can be a bit tricky with my little people. These ingredients need to be finely chopped. I mean finely {like they can’t see them}.
Instead of spending all afternoon chopping the mushrooms and onions into teeny tiny pieces, I simply whirled them up in a small food processor. Easy peasy!
The recipe called for ground turkey but I used ground venison because that is what we had on hand. I am grateful that Honey is an avid hunter which provides our family with plenty of lean meat.
Being able to adjust the recipes another reason I love receiving a meal plan from eMeals. The meal plan gives me a guide of what I can serve for dinner. But it’s not so rigid that I’m unable to customize the recipes to what will fit our family.
Add bacon, venison, mushrooms, onion, Italian seasoning and one egg into a large bowl. Add salt and pepper to your own taste {I used a good bit of salt and pepper}. Mix until combined and form into golf ball shaped meatballs.
Fry the meatballs in oil until brown and cooked through.
Remove the cooked meatballs from the pan and keep warm. Add tomatoes to the pan and simmer for 15-20 minutes.
Return the meatballs to the skillet; cover and simmer for 5 more minutes.
Add a little bit of mozzarella and freshly chopped basil to complete the dish.
Oh my goodness, these Bacon Meatballs were so awesome! Filling and full of flavor.
This was just one of the simple recipes from our Clean Eating Meal Plan. I can’t wait to try out the other Easy, Healthy Meal Plans.
If you struggle with meal planning like I do, eMeals might be the solution you are looking for!
