My Honey really isn’t into Valentine’s Day. He will fuss if I don’t do anything for him but doesn’t care for cards or candy or heart covered silk boxers.
But what he does love is good food.
And what he really, REALLY loves are my Tommy Fries. Never heard of them? Well, take a peek at this yumminess.
Those my friends are Tommy Fries. Straight up Man Love.
Here’s what you need:
- 4-5 medium potatoes, peeled and chopped
- 1 small onion, chopped
- 1 TBSP olive oil
- 1/4 TSP each of garlic powder, seasoning salt, and black pepper
- Ranch dressing
- 1 cup grated sharp cheddar cheese
First, prep your potatoes and onions. The potatoes need to be bite sized and the onions a little smaller.
Season the potatoes and onions with the olive oil, garlic powder, seasoning salt, and black pepper. The seasonings can be adjusted to suit your tastes. Mix until all the potatoes and onions are covered evenly. The goal is to have a light coat of the oil. Add more olive oil if needed. Transfer to a glass dish for cooking.
Preheat your oven to 300 degrees.
Now if you have plenty of time you can bake everything in the oven. Me? There is usually at least one of my little people crying while I scramble to get dinner on the table. So I just nuke it until it’s done. Cover the glass dish with plastic wrap (or a damp paper towel – my favorite) and microwave until tender. Probably about 15-20 minutes.
Don’t worry. We will get to the oven part in just a minute.
Make sure to keep checking for potato done-ness or you might end up with little dried up hard potatoes. Yuck!
Once the potatoes and onions are tender, drizzle with your favorite ranch dressing then cover with sharp cheddar cheese.
Here’s the oven part. Place the dish in the oven for about 5-7 minutes. You only want to melt the cheese so that it combines with the ranch.
Yummy gooey-cheesy-ranchy goodness.
Honey loves them. This recipe may have been a determining factor in our engagement.
On Valentine’s Day I’ll serve the 3 little greenwood’s their favorite dinner. Hotdogs, of course. Then Honey and I will our own Valentine’s dinner of steaks, Tommy Fries, salad and Cake Balls.
