Cheesy Wild Rice Chicken Soup Recipe

If you love soup as much as I then you are going to fall in love with my Cheesy Wild Rice Chicken Soup Recipe. It is overflowing with tender chunks of chicken, wild rice and creamy cheesy goodness.

Truly there are few things in life better than a hot bowl of soup. It is the ultimate comfort food.

This recipe is my go to dish to share with a sick neighbor or a new mommy. My picky Little Boy even eats this yummy soup! This post contains affiliate links marked with an asterisk. Click here to see my full disclosure policy. 

Cheesy Wild Rice Chicken Soup Recipe

Ingredients:

  • 1 small onion, finely chopped
  • 1 cup shredded carrots
  • 5 cups of chicken stock (or water)
  • 1 Box of Wild Rice*
    (rice & seasoning packet)
  • 2 cups chicken, cooked and chopped
  • 8 oz. package of Velveeta, cubed
  • 1 can of cream of mushroom soup

Step 1: In a large stock pot, cook onions and carrots in a small amount of olive oil on medium heat. It usually takes about 10 minutes or so to get the onions translucent.

Step 2: Add chicken stock, seasoning packet from the rice, and chicken. Bring to a boil then add wild rice and seasoning packet.

Reduce heat, cover and cook for 15-20 minutes.

Step 3: Add soup and cheese. Continue to cook the Chicken Soup Recipe until cheese is melted.

You can serve this Cheesy Wild Rice Chicken Soup Recipe as soon as the cheese is melted but the longer it cooks the creamier it becomes.

Enjoy it with cornbread and a salad for dinner.
